The late Dr. Ann Wigmore's famous energy soup recipe! You can make many variations upon this and use whatever type of greens you have on hand. But the basic idea of energy soup is a high green, low-sugar soup packed with easy-to-digest nutrients.

1.) Soak the pine nuts in water ~2 hours then rinse with fresh water. This step is optional but recommended to remove the enzyme inhibitors that occur on nuts and to allow optimal absorption of nutrients.
2.) In a blender, add the water, pine nuts, apple, avocado, and dulce and blend until smooth.
3.) Lastly, add your fresh greens and blend until smooth again. The reason we add the greens into the blender as the last step and not earlier is to minimize the oxidation of the nutrients and maximize their bioavailability for your body. Any kind of greens work well—spinach, perslaine, lambs quarter, sunflower greens, or any combination. So just use whatever you have that is freshest and on hand.
