Quinoa Raisin Cookie Recipe

Ingredients
- 1 cup quinoa soaked overnight to sprout
- 1 cup almond flour
- 1 cup raisins soaked 1 hour
- 1/2 cup raw honey or agave nectar
- 1/2 tablespoon cinnamon
- dash sea salt
- 1/2 teaspoon vanilla (alcohol free)
Directions
1.) Soak the quinoa in a bowl of water overnight, then rinse before using. (This sprouts the quinoa, which increases its vitamin and mineral content and allows for easy digestion.)
2.) Soak the raisins in a bowl of water for about 1 hour, then rinse before using. This is to soften and rehydrate the raisins.
3.) In a food processor, blend all the ingredients—except the raisins—until smooth and doughy.
4.) In a large bowl, manually stir in the raisins with the cookie dough.
5.) Scoop the cookie dough into 15-20 individual cookies on a food drier sheet. The cookies won’t spread out as they dry like cookies in the oven would, so make them the size and thickness that you want them to end up. About 1/4 inch thick works well.
6.) Dry in a food drier for 8 hours at ~105 F degrees, flipping halfway through. The cookies are done when dry and crisp on the outside, but still moist on the inside. They’re especially good while still warm!
