Vanilla Chia Seed Pudding Recipe
Vanilla chia seed pudding with its tapioca-like consistency makes for a great tasting—and phenomenally cool looking—raw food dessert or even healthy breakfast that is a great source of omega-3's!

Ingredients
- 2 cups almond milk
- 2/3 cup chia seeds
- 2 teaspoons stevia
- 3/4 teaspoon vanilla (alcohol free)
Directions
1.) Grind the vanilla bean into a powder in a clean coffee grinder. Or just use alcohol-free vanilla extract if in a hurry.
2.) Stir together the chia seeds, almond milk, and vanilla, mixing well.
3.) Let soak for 20-30 minutes stirring the mixture every 5 minutes or so until it thickens into a nice Tapioca pudding consistency. Sweeten to taste with stevia or raw honey and garnish with fresh fruit.
