Remove any pits from the dates by hand. Then blend the dates with a dash of water and gradually add more water until your desired consistency is reached. Generally, a honey-like consistency is most versatile for use as a sweetener in other recipes. Keeps for a week or more if stored sealed in the refrigerator because the natural sugars help to preserve it and keep it fresh. So it works really well to whip up a small jarful and store in the refrigerator for whenever you might need a sweetener. Any kind of dates works well in this recipe—medjool dates, honey dates, etc.
